Marinated olives and Margherita pizza are two great ideas for a quick dinner or appetizer option.
Marinated Olives
1 jar kalamata olives, drained
1t. Italian seasonings
1/2t. garlic powder
1/2c. olive oil
I love marinated olives. Pouring out the brine and adding the herbs and oil brings a softness to the olives. Try variations: mixed olives, chunks of sun dried tomato, hard cheese, fresh herbs, roasted garlic, etc. Mix the ingredients, and enjoy!
Margherita Pizza
1 multigrain premade crust, or crust of choice
8 slices fresh mozzarella cheese
1/2c. parmesan cheese, freshly grated
3-4 cloves garlic, minced
1-2 large tomatoes, diced
1/2c. fresh basil, rolled and sliced into strips; chiffonade
1T. olive oil
Salt & pepper, to taste
Brush crust with olive oil, layer on the garlic and tomatoes, and season with salt and pepper. Place the mozzarella slices closely together on the pizza and sprinkle with parmesan. Bake at 450 degrees until cheese is well melted. Remove, and cover with fresh basil.
