Wild-harvested Chickweed Salad with Orange Marinated Turkey Tenderloins
Ingredients
1 pkg organic turkey tenderloins, sliced in half, lengthwise
Marinade
1 orange, juiced
1/4c. grape seed oil
2 T. honey
1/4 t. paprika
Salt & pepper, to taste
Salad
2 c. wild-harvested chickweed
1/2 orange bell pepper, sliced thin
1/4 c. red onion, shaved
1/4 c. broccoli florets, finely chopped
1 T. raw hemp seeds
1 t. fresh ginger, minced
1/2 orange, juiced
1 T. extra-virgin olive oil
Salt & pepper, to taste
Place the tenderloins into a hot skillet and pour the marinade over. Cook on medium heat and turn twice to ensure full flavor. Once done, turn off the heat and allow the meat to rest.
Combine all of the salad ingredients, hand-toss, and serve over the marinaded tenderloins. Enjoy!!
