Tasty Treasures: Farm Fresh Breakfast


Ingredients

2 organic eggs, poached
1 c. fresh arugula
2 T. flat leaf parsley, chopped
1 medium tomato, wedged
2 T. red bell pepper, chopped
1/2 oz. goat cheese (or desired cheese), crumbled
2 T. extra-virgin olive oil
Sea salt & pepper, to taste



Layer the fresh ingredients, top with the poached eggs, drizzle with olive oil, season, and enjoy!
