Tasty Treasures: Homegrown Tomato Salad with Herbes de Provence Vinaigrette

There's nothing like homegrown tomatoes still warm from the sun.

 
Ingredients
 
Homegrown tomatoes, cut into bite-sized wedges
Sweet onion, roughly chopped
Herb of choice; arugula, basil, parsley...
Herbes de Provence Vinaigrette
 

 
Herbes de Provence Vinaigrette
 
3 parts extra-virgin olive oil
1 part raw, unfiltered apple cider vinegar
Herbes de Provence
Sea salt & pepper, to taste
 
*whisk well, and let sit to allow time for the dried herbs to soften.
 

 
Herbes de Provence
 
Mix equal parts and store in an
airtight jar:
Rosemary
fennel
lavender
basil
oregano
thyme
