When I woke up this morning, I had a strong craving for toasted sesame oil. The distinct nutty scent and taste that tickles your palate and opens your senses is incomparable.
What an expectant mother craves, is what she gets! Happily, I already had the toasted sesame oil. As far as the other common ingredients normally used in an Asian style noodle salad, I had to improvise. The results were delicious, nevertheless.
Ingredients
1/2 lb. Organic Linguine Noodles
1 Peeled & Shredded Carrot
1 Seedless Cucumber, Chopped
1/2 c. Red Onion, Chopped
1 c. Arugula, Chopped
1 t. Black Sesame Seeds
Dressing
2 T. Toasted Sesame Oil
4 T. Extra Virgin Olive Oil
3 T. Rice Wine Vinegar
2 T. Bragg's Amino Acids
(Soy Sauce or Tamari may be substituted)
1 T. Honey
1 T. Grated Ginger Root
Optional: Grilled Chicken
Other possible additions:
Cilantro
Jalapeno
Red Bell Pepper
Scallions
Peanuts
Cook the linguine according to package instructions, drain, toss with remaining ingredients, and enjoy!!
