Tasty Treasures: Mediterranean Chicken



     Mediterranean Chicken is a great dish for an intimate family dinner, or for large parties. I would suggest using chicken breast tenderloins for the latter, as the preparation and cooking time is much faster.



Ingredients

4 chicken breasts on the bone, 4 boneless breasts, or 1 pckg chicken breast tenderloins

1 medium red onion, sliced in rings and separated

1c. kalamata olives, preferably pitted

1/2c. capers

4 garlic cloves, minced

Juice of 1 & 1/2 lemons

1 T. honey

2 T. olive oil

1 t. Italian seasoning

1/2 t. paprika

Salt & Pepper to taste

     Preheat oven to 400 degrees. Wash and trim fat on the chicken of choice. Oil and season the bottom of a baking dish. Place the chicken in the dish and season with salt, pepper, and paprika. Add the minced garlic, olives, capers, and onions on top of chicken. Sprinkle the top with the Italian seasoning, olive oil, lemon juice, and honey. Bake- 1hr for breasts on the bone, 30-40 minutes for boneless breasts, and 20-25 minutes for breast tenderloins (depending on the accuracy of the oven and the size of the breasts, test the chicken before removing from the oven). Make sure to flip the breasts once or twice for even cooking and seasoning.
