Tasty Treasures:


     Food is always best when it is shared. I am happy to share with all of you!  Today's recipe is a favorite for many. I love this recipe for big parties because it is fresh, easy to make, and tastes best at room temperature. Enjoy!                      
                               

~Mexican Rice Salad~


~Ingredients~

1 box of "East of Eden", long grain and wild rice- Original. (I like East of Eden because it contains natural ingredients, and no MSG.).

 1 large tomato, chopped

1 large cucumber, peeled, seeded, and chopped

1 jalapeno, seeded, and diced

1/2 or 1/4 red onion, diced

1 small bunch of fresh cilantro, stemmed

1 lime, juiced

1 splash of olive oil

salt and pepper to taste

     Prepare rice according to instructions, adding spice packet. Let cool before mixing with vegetables to prevent wilting. Add lime, oil, salt and pepper. Toss. 4-6 servings.
   

~Variations~

Italian
Omit jalapeno, cilantro, lime, salt and pepper. Add fresh basil, fresh grated parmesan cheese, and two splashes of balsamic vinegar. 

Mediterranean
Omit jalapeno, cilantro, and lime. Add sliced kalamata olives, feta cheese, and lemon.
