Tasty Treasures: Orange Encrusted Cod & Sweet Potato Fries

     This recipe was created quite by surprise, using what ingredients I had on hand. It turned out so delicious that I knew I had to share it with all of you.

Ingredients
3 medium sized cod fillets
3 large oranges
1c. ritz crackers crushed (I used an organic brand for this recipe).
2T. olive oil
1T. garlic powder
Salt & pepper, to taste
4 sweet potatoes, peeled, sliced (Precut sweet potato fries will do).
Brown sugar
1/2t. ground cinnamon

Place the cod fillets in a large baking pan, add the juice and zest of two oranges, salt, pepper, and 1/2T. garlic powder. Cover and refrigerate over night. 
Preheat oven to 375 degrees. Add the zest of one orange, salt, pepper, and 1/2T. garlic powder to the crushed crackers, mix and spread out on a cookie sheet. Coat both sides of each cod fillet and lay out in a clean baking pan. Bake for thirty minutes, until fish looks cooked and encrusted mixture is browned. In a separate baking pan spread out the sweet potato fries, coat with olive oil and sprinkle with brown sugar and cinnamon, mix and bake for thirty minutes (or until fries are slightly crispy, depending on the oven). Serve together and garnish fish with orange and parley.
