This easy fruit and bread pudding is a wonderful dessert that tastes like it took hours to prepare.
Ingredients
4 ripe peaches, pitted, chopped
1T. fresh ginger, grated
2T. sugar (I used a natural sweetener in this recipe).
2 slices specialty sweet bread (I used a cobblestone sugar dusted bread), toasted and buttered
1/2c. cream
Mix the peaches, ginger , and sugar in a bowl and let sit out on the counter for two hours to allow the peaches to sweat, mixing intermittently. After toasting and buttering the bread, slice into small squares and place in a bowl. Pour the fruit mixture over, and drizzle with fresh cream. Yields 2 servings.
