     Kale is a delicious green that is often overlooked, mistaken merely as a  garnish. Although kale is beautiful and adds interest to the plates of many main entrees, its true beauty is found within. For, kale is one of the most nutritious of all cruciferous vegetables.

    
     Kale provides the body with an abundance of vitamins, minerals, antioxidants, and omega-3 fatty acids. Moreover, it aids the body in digestion and assimilation. Furthermore, one cup contains nearly 20% of the RDA of dietary fiber, which promotes regular digestion, prevents constipation, lowers blood sugar and curbs overeating. There are a few different types of kale, all easily found at your local farmer's market and grocery.
Preferably eaten raw, kale can also be steamed, sauteed, baked, boiled, and dehydrated. To truly gain the maximum benefits that the notoriously curly kale has to offer, try to incorporate it into your diet as often as you can.
