Ingredients
2 large boneless chicken breasts, lightly browned on both sides with olive oil and salt & pepper, dice and set aside
2 small packages of shitake mushrooms, stemmed and thinly sliced
8 baby red bell peppers, sliced into rings
2 stalks fresh lemon grass, cut into large enough pieces to fish out later
2T. fresh ginger, peeled and diced
2 cans unsweetened coconut milk
2c. water
1/2 lime, juiced
1t. chili sauce
1T. amino acids (or tamari), more may be added according to preference
Cilantro for garnish
Simmer the lemon grass and ginger in the coconut milk and water for ten minutes. Add the remaining ingredients, bring to a boil and then let simmer for 10-15 minutes. Remove the lemongrass stalks, garnish with cilantro, and enjoy!
