Tasty Treasures: Lower-Carb Spinach Quiche

Ingredients
6 large eggs
1/4 c. half & half
1 container organic baby spinach, sauteed in olive oil, salt & pepper
3/4c. fresh parmesan cheese, shredded
1 potato, skin peeled, stripped with a vegetable peeler (enough to line pie dish)
Salt & pepper, to taste

Set oven to 350 degrees. Grease a pie dish with olive oil. Place one thin layer of potato strips on the sides and bottom of the dish to make a potato crust. Sprinkle with a bit of cheese. layer the sauteed spinach over the cheese, and sprinkle the remainder of the cheese over the spinach. In a separate bowl, whisk the six eggs, cream, and salt & pepper. Pour over the spinach, and bake for approximately twenty minutes, or until the top is lightly browned, Serve with a simple salad, and enjoy! 
Yields six servings.
