Tasty Treasures: Cilantro Pesto

     A delicious and easy way to incorporate cilantro into your diet is to make a batch of  fresh cilantro pesto.

Pesto is most commonly known as a sauce made with basil and pine nuts. However, pesto can be made with virtually any of your favorite herbs. 
Sprouted rye, goat cheese, tomato, cilantro pesto, & baby greens
Ingredients
2 bunches fresh, organic cilantro leaves, washed & stemmed
3/4 c. shelled, raw pistachio nuts
3 large garlic cloves
1/2 c. fresh, grated parmesan cheese
1/2-1 c. extra-virgin olive oil
Salt & pepper, to taste

Blend all of the above ingredients in a food processor to desired consistency. Pour into a storage container, drizzle a layer of oil over the sauce (to maintain freshness), cover and refrigerate.

Enjoy your fresh pesto in many ways:
  • Tossed with pasta
  • Drizzled over an open-face sandwich
  • Mixed with mayonnaise
  • Mixed with sour cream for a fresh dip
  • Add a bit more olive oil and fresh lemon, lime, or vinegar for a salad dressing
  • Cilantro-Insalata Caprese
  • Pesto potatoes
  • As a marinade
