Tasty Treasures: Golden Beet Salad

Ingredients
5 golden beets, peeled, quartered, and sliced at 1/4"
1/4 c. red onion, sliced in half moons
1/2-1 c. fresh basil, chiffonade
1/2 c. goat cheese, crumbled
1/8 c. pine nuts
3T. extra-virgin olive oil
Salt & pepper, to taste


Preheat oven at 350 degrees. Place the peeled beets into an appropriate baking dish. Toss them with 2T. olive oil, season with salt & pepper, bake for ten-twenty minutes (depending on your desired texture), remove, and set aside.
Once the beets have slightly cooled, place them into your chosen serving dish, layer the red onions, basil, goat cheese, and then pine nuts. Drizzle the salad with 1T. olive oil and a dusting of salt & pepper. Yields 2-4 servings.
