Natryl Instincts: Chicory



The beautiful azure flowers that you see blooming along the roadsides this time of year are none other than Chicory; Chihorium Intybus.

Chicory is a perennial herb that can be found growing all throughout the meadows and roadsides of the world.

Known mostly as a substitute for coffee, chicory has actually been highly valued as a medicinal herb since ancient times, and for a multitude of reasons.

Some benefits of chicory may include, but are not limited to, gallbladder health, liver aid, insulin nourishment, metabolism regulation, colon health, blood purification, gentle laxative, toxin elimination, enhanced concentration, glucose stability, cholesterol balance, heart health, skin problems, and many more.

Indeed.



Chicory leaves may be consumed raw, steamed, sauteed, or stewed. The roots are generally roasted to produce a coffee-like beverage (can be purchased at your local health food store). However, I feel that the roasting process may destroy some of its medicinal value. Therefore, I suggest dehydration or adding roots to fortify broth.

Please consult a reference guide before harvesting wild herbs. And, as always, gather consciously and in areas free of pesticides.
