Tasty Treasures: Apricot & Fennel Salad



This salad is satisfying, yet light enough to keep you refreshed on a hot summer's day.


Ingredients

1 fennel bulb, halved, sliced thin
2 fresh apricots, pitted, sliced thin
3 white radishes, julienned
1 bunch cilantro, roughly chopped
1 T. fresh chives, chopped
1 T. shaved almonds
2 T. goat cheese, crumbled

Dressing
1 orange, juiced
2 T. extra-virgin olive oil
Sea salt & pepper, to taste

Toss and enjoy!
Yields 2-4 servings.
