Dill; Anethum Graveolens, is a distinct, culinary herb most commonly found complimenting fish, cucumbers, and pickled vegetables.
The delicate, feathered leaves, seeds, and flower heads may be used for their fresh and tangy taste.
While dill is usually found enhancing culinary dishes, it contains many medicinal properties, as well. Such properties include, but are not limited to: digestion, insomnia, diarrhea, menstrual and respiratory disorders, oral care, and anti fungal. Dill is also being studied as a possible cancer preventative. "Now it is the turn of the Monoterpenes to come under the lime light. These chemoprotective Monoterpenes, being stimulant in nature, activates secretion of an enzyme called glutathione-S-transferase (the radical glutathione is an effective anti oxidant) which is very effective in neutralizing carcinogens, particularly Cyano- and Benzo- derivatives and free radicals, thereby protecting from cancer. The other antioxidants in essential oils of dill also contribute to this." ~organicfacts.com
Dill originates from the Mediterranean and West Asia, however, the seeds can be purchased through your local nursery or seed catalogs. This beautiful herb is easy to grow. I have yet to buy more seeds. As, dill reseeds itself continually.
Use dill to freshen your everyday meals, and enjoy knowing that you are truly enhancing your body, as well.
