Tasty Treasures: Grapefruit Salad

     This summer salad is fresh, delicious, and invigorating. Removing the grapefruit segments from their bitter pith and segment lining is a little tedious, but the salad would not be the same otherwise.
Ingredients
4 organic ruby red grapefruits, peeled, and segmented
1 pkg organic blueberries
1t. fresh grated ginger, or 1/4t. organic ginger powder
1/4c. fresh mint, diced
1T. honey

After peeling and separating the grapefruit, remove the fruit from its segment carefully and squeeze any excess juice from the segment lining over the fruit. Add the blueberries, grated ginger, mint, and honey. Toss lightly, and serve. Yields four servings.
