Ingredients
2lb. french beans, washed, cut in half
6 medium-sized tomatoes, wedged
1/2c. sliced almonds
1/2c. fresh Parmesan cheese, shredded
In a separate bowl:
whisk 1T. Dijon mustard, juice of 1/2 of a lemon, 2T. extra-virgin olive oil, 1T. honey, sea salt & pepper, to taste.
Toss with the above ingredients and enjoy! Yields 2-4 servings.
**Hint: if fresh green beans have too much bite for your taste, lightly blanch the beans prior to tossing with the remaining ingredients, or just allow the salad to rest on the counter for twenty minutes and the lemon will do the tenderizing for you :)
