Tasty Treasures: Grilled Chicken with Wilted Swiss Chard & Baby Spinach Salad


Ingredients

2 large, boneless, skinless chicken breasts, seasoned (sea salt, pepper, & paprika), grilled

1 bunch organic swiss chard, lightly wilted in coconut oil, seasoned with sea salt & pepper

Salad

2 c. organic baby spinach
1 small shallot, sliced into thin rings
2 radishes, shaved thin
Parmesan cheese, shaved, to taste
2 T. pine nuts
2 T. extra-virgin olive oil
Sea salt & pepper, to taste
Hand toss


Layer all of the ingredients, as shown above, and enjoy! Yields 2-4 servings.
